Positions at Miel Bakery

We are looking for a head barista to shape and direct our coffee and drinks program at Miel. This is a new position as we look to level up our coffee and drinks offering in terms of achieving delicious and consistent drinks in an environment focussed on quality and grace of service before everything else. Each cup matters and each drink to be extracted to be one you are proud to serve.

 

Experience:

  • You will know how to dial in coffee and tweak through the day as needed
  • Train the team in testing for quality and achieving consistency in milk frothing
  • Consistent Latte art

 

Responsibilities:

  • Coffee program: exploring new roast profiles, introducing guest beans, introducing special drinks on rotation, add retail coffees (so understanding the different coffees and speak confidently about them)
  • Tea and cold drinks development
  • Deliver an informed approach to communicating speciality coffee while engaging with customers
  • Maintaining a strict level of exceptional hygiene at the bar and customer spaces
  • Perform end-of-day and weekly deep cleaning routines

We are looking for an experienced barista with a passion for coffee and customer service. Please apply only if you basic coffee aka heart latte art looks like this. 

 

We use a automatic La Marzocco coffee machine, Assembly Roast coffee beans, Northiam Dairy milk.

 

Responsibilities include:
• Making delicious coffee quickly
• Greeting and serving customers, primarily behind the counter and sometimes at their tables
• Learning about our French pastries and explaining them to customers
• Working the till
• Keeping the counter full by communicating requirements with bakers and consolidating pastries
• Completing daily closing checklist, including cleaning, restocking, organising and resetting for the next day.
• Maintaining terrific hygiene and presentation in store

 

The ideal candidate will have:
• Speciality coffee experience and interest
• Strong people skills and a happy disposition
• Customer service experience
• Tidy and well presented manner 
• Strong interest in baking
• Ability to work weekends

We are hiring an all-rounder baker and pastry chef. You’ll be working early morning shifts (5/6AM starts) in baking viennoiserie and pastries, keeping the space clean, and creating inspiring products.

We are looking for a person happy to work in an open-kitchen with the following skills:

Minimum requirements:
• 2+ years experience baking professionally or highly motivated culinary school graduates
• Baking products on demand as needed through the day.  
• Friendly, conversational and outgoing with customers and managing the shop (When needed to jump in to give a hand during busy periods)
• Managing and organising deliveries
• Opening the shop and baking the full counter
• Keeping stock and inventory, diligent with labelling and organisation, FIFO stock rotation 

The person must exhibit the following traits:
• Speed and motivation to work independently in a fast-paced environment
• Attention to detail and hygiene
• Strong initiative and ownership
• Organised and not flustered by changing demands

Job Types: Full-time 

We are hiring a bakery manager to work on-site at our Warren Street bakery. The  right candidate must be obsessed with preserving high standards, passionate about hospitality, and be open and flexible to changing demands. You are managing the daily funcitoning of the bakery so that the owners can focus on other responsibilities.


Job Responsibilities:

You will be serving pastries and coffee in the front-of-house during part of your week. The remaining time, you will be supervising and training the team, ensuring smooth operations with ordering, creating the FOH staff rota, following through with checklists and keeping a tab on the team, managing Deliveroo reports and other online ordering requirements, overseeing general operations to ensure a smooth, clean and efficient work environment to deliver the best customer service. You will not be required to bake.


Some of the responsibilities include:

• Providing excellent customer service – natural at making small talk and easy going
• Communicating with bakers throughout the day for topping up counter as needed 
• Keeping stock and inventory, diligent with labelling and organisation, FIFO stock rotation
• Communicating with team and suppliers to ensure we are well stocked and product quality remains high

• Handling online customer orders, working on small changes to our website and online portals

• Ensuring we post regularly on social media

• Managing your team (of 3-6 people), including their shifts, salaries, hiring, etc

• Dealing with service staff such as plumbers, electricians, repairmen, etc when issues arise

• Maintain processes related to hygiene, health and safety, allergens

• Replying to customer service requests via email, chat, instagram, in-store, etc.

• Creating weekly reports on processes and quality


Minimum requirements:
• 2+ years working professionally in a busy bakery
• Fluent in English
• Friendly, conversational and outgoing with customers and managing the shop

Training will be provided, but must be interested in:
• French style baking – sourdough, viennoisserie or patisserie
• Making and serving speciality coffee


The person must exhibit the following traits:
• Proficient barista with latte art skills 

• Punctual, highly organised and tidy
• Speed and motivation to work independently in a fast-paced environment… it really is very fast paced! 
• Attention to detail and hygiene
• Strong initiative ownership
• Friendly and happy to serve customers and work well alone as well as within the team.

• Good with Microsoft Excel and Google Docs/Sheets

You’ll be working with a supportive team in creating memorable experiences for our customers, and reporting directly into Shaheen Peerbhai. We’re looking for full-time chef tourièr(e) who has minimum 2+ year experience making croissants and related viennoiserie from scratch, working with provers to control temperature and humidity and proficient in using a pastry sheeter.

French pâtisserie experience and skills will be given a preference.
