Learn the foundations of ice cream making with Yuqiao, a Bloomsbury-based artisanal ice cream maker and founder of Matter at Hand. In this 4-hour hands-on course, we will cover the principles and techniques of ice cream making, and learn to churn ice cream by hand with a traditional ice bath method.
We will make three flavours reflective of the English summer, using the infusion technique: a tea, a spice, and a herb. While waiting for the ice cream to freeze, we will go through some alternative techniques and have a tasting session of Matter at Hand’s seasonal ice creams.
