The sando cake is one of Japan’s most quietly genius creations — a soft, pillowy chiffon, filled with fresh cream and summer fruit, cut into neat little rectangles that somehow feel both elegant and completely unpretentious.
In this workshop, we’ll make a strawberry and cream vanilla chiffon sando from scratch. You’ll learn how to build flavour into the batter, get the texture just right (light, moist, cloud-like), and assemble and finish it so it looks as good as it tastes.
You’ll go home with eight pieces — enough to share, though no pressure to.
Please bring an apron — this is a hands-on one.
This class is led by Heidi.
Heidi Luk trained as a product and jewellery designer before a love of colour, beauty, and sugar led her to Le Cordon Bleu. She launched Sparks & Cakes in 2014, where design and pastry meet — her cakes are as considered as they are delicious.
