About Miel

Miel is a bakery and workshop space in Fitzrovia, London. Miel is my dream realised – my new home to bake, teach and build a community around the joys of baking and pastry. My name is Shaheen Peerbhai, and I’m a pastry chef trained for many years in France (Le Cordon Bleu & Alain Ducasse), a cookbook author (Paris Picnic Club), and teacher (baking classes across India, London, Paris). You can read more about me here.

TEAM

The pastries, viennoiseries and breads at Miel are made with care, technique and precision by a small but passionate team of chefs in the morning and the baking continues through the day so you can enjoy them straight from the oven.

INGREDIENTS

Flavour comes first. And for that we take great care in sourcing our ingredients because good food can only come from good ingredients.

And for that we take great care in sourcing our ingredients. We use the best ingredients we can get our hands on from France while our eggs and dairy are British. Flour from Foricher mills, Valrhona chocolate, Isigny Ste. Mère butter, Cacklebean eggs (delivered to the bakery from Cotswolds a day after they are laid!), Northiam Dairy,

MENU

Our menu is guided by the season but also included our permanent favourites. We hope you will come visit for pastry and hot chocolate. And if there’s something you fancy, just let us know and we try our best to make it happen! View sample menu.

DRINKS

For our coffee, we use a La Marzocco espresso machine, Assembly Coffee,   Northiam Dairy and Oatly.

We offer a selection of quick teas from Good and Proper Tea and speciality teas from Lalani and Co. and Postcard Teas.

COMMUNITY

There is a beautiful, buzzing community in Fitzrovia and beyond without which we wouldn’t exist. We are eternally grateful and humbled by that and by everyone who visits – I  for one, pinch myself to think that someone has woken up early in the morning to come and sit down at our bakery at 8AM to eat a pain au Chocolat and coffee.

Our customers are a mix of the locals, the office-goers, the wonderful NHS staff working at UCLH, other small businesses, our delivery drivers who know where to come to buy good bread  and brownies even though they delivery to other similar businesses across the city. 😉 And of course the curious travellers who have heard tales of our pistachio swirls and kouign amann make they way to visit us.

Thank you ALL.

– Shaheen + team Miel

Behind the scenes

A documentary film by Aidan Jordan on Miel that marks the background, ethos and everyday life at Miel Bakery.

Oliver Bonas came over to feature Shaheen in May 2023.

Miel opened its door in March 2019 just a few doors down from where it currently resides. All I wanted to do was bake delicious things and make my obsession with baking a business. We opened with the bare-minium and built as we grew.
