At the bakery, my goal is to make the kind of bakes I want to eat myself. And with classes, it’s to teach the kind of things I would be excited to learn. The focus is always on bringing beautiful flavours and textures together. Something with a bit of unexpected joy, a bit of je ne sais quoi.

Join us to create this beautiful cake decorated with a gorgeous textured basketweave buttercream piping, and edible flower detail.
Flavour - A Blueberry & Lemon Cake made with layers of lemon sponge, dotted with blueberries for added moisture and depth of flavour lightly soaked with a lemon vanilla syrup. Between each layer is a wonderful blueberry compote and American-style cream cheese buttercream. The cake is finished with a light vanilla Swiss meringue buttercream, which is perfect for creating different piping and finishing techniques. What You’ll Learn: • Light Lemon Sponge – Learn the secrets of how to create a light sponge dotted with fruit. • Blueberry Compote & Lemon Syrup – Create a wonderful balanced fruit compote to layer your cake with and a lemon vanilla syrup to elevate your cake flavour. • Buttercreams – Create a classic American style cream cheese which will be used when layering the cake and then create a luxurious meringue-based butter cream which will be used when coating and decorating your cake. • Stacking & Layering Techniques – Learn how to layer, crumb coat and assemble a beautiful cake with confidence. • Decoration – Create a pretty buttercream basketweave ribbon detail and buttercream beads. Then adorn your masterpiece with edible flowers. Please not the flower varieties may vary throughout the growing season.
