This dessert is inspired by Japanese-style “sando” (sandwich) cakes. In this class, we’ll dive into the art of crafting a light, airy, and flavourful dessert that perfectly balances elegance and comfort. The Earl Grey Chiffon Sando combines the delicate, citrus notes of Earl Grey tea with the soft, cloud-like texture of chiffon cake, all brought together by a luscious fresh cream and summer fruit filling.
Throughout this lesson, you will learn:
– How to infuse Earl Grey tea into the cake batter for a fragrant and aromatic base. (Bergamot!)
– The secrets to achieving the perfect chiffon texture: soft, moist, and fluffy.
– Tips for assembling and decorating your sando for an elegant finish.
By the end, you’ll have 8 pieces of stunning Earl Grey Chiffon sando to share with friends, family, or simply to enjoy as a treat for yourself. You will also take home the chiffon tin you use to continue baking with it at home.
